Siphon Brewing Cassandra reimagines the Oatmeal Stout with a dry, Belgian-brewed, Irish-influenced sensibility. Appearance. Opaque, dark brown to near-black in color. Pours with a thick, creamy, long-lasting tan head that leaves dense, sticky lacing on the glass.

Aroma. High intensity roasted malt aroma dominated by fresh espresso and dark cocoa. Low, earthy and herbal hop notes. Clean fermentation profile with virtually no yeast esters, allowing a subtle hint of black licorice and a faint, crisp marine minerality to emerge.

Taste. Begins with an assertive wave of bitter roasted coffee and dark chocolate. The addition of oyster shells enhances a light, savory minerality that accents a perceived chocolatey-licorice sweetness. Finishes medium-dry with a lingering, roasty bitterness. Mouthfeel. Medium-full, incredibly smooth, velvety, and creamy on the palate due to the oat addition. Carbonation is moderate. A light, pleasant alcohol warmth is present, without any harsh astringency.
