Siphon Brewing

Blinker is an exceptionally crisp and refreshing Saison that honors the rustic traditions of the Henegouwen region. The grist of barley and wheat provides a soft, grainy foundation for the earthy and spicy character of Poperinge-grown Challenger and Goldings hops. Fermented with a highly attenuating yeast strain, the beer achieves a bone-dry finish that accentuates a pronounced citrus fruitiness. The result is a vibrant, effervescent ale where bright lemon-like esters dance alongside subtle peppery phenols, offering a sophisticated and thirst-quenching experience that bridges modern precision with farmstead heritage.

Appearance. Deep pale gold to light orange; hazy appearance due to being unfiltered and the use of wheat. It features a dense, rocky, long-lasting white head with significant Belgian lacing.

Aroma. Moderate to high intensity with a complex blend of fruity esters and spicy phenols. Pronounced citrus and lemon notes lead, supported by earthy and floral hop character from Challenger and Goldings. Low grainy-sweet malt presence.

Taste. High attenuation delivers a very dry palate. Initial flavors of soft, grainy cereal malt are quickly overtaken by a mix of peppery yeast spice and bright citrus fruitiness. Moderate hop bitterness is amplified by the dry finish. Earthy and spicy hop flavors linger into a clean, refreshing aftertaste.

Mouthfeel. Light to medium-light body with high, effervescent carbonation that provides a prickly, refreshing sensation. Very low alcohol warmth and a crisp, clean finish without astringency.
