Aroma. Moderate to high intensity with dominant lactic tartness. Bready, doughy wheat malt character is prominent. Distinct pome fruit notes of Estrie pears and bright, spicy ginger aromatics are present. A restrained, clean sea salt mineral character is noticeable, with no hop aroma.
Taste. Initial impression is tart and refreshing with a medium lactic sourness. Soft, bready wheat flavors support a fruit-forward profile of ripe pears and zingy ginger. Very low bitterness; acidity provides the primary balance. A noticeable but restrained sea salt character adds a savory, margarita-like quality. Finish is very dry and clean with a lingering acidic crispness.
