The addition of fresh-ground cinnamon sticks provides a warming spice, while vanilla beans and barrel-aged maple syrup introduce a luxurious, velvety sweetness. At 14% ABV, the alcohol is integrated but prominent, enhancing the depth of dark fruit esters and charred wood. It is a decadent, harmonious marriage of intense roast, spirit-forward complexity, and dessert-like adjuncts.
Appearance. Jet black and opaque (40+ SRM). A modest, dark tan head with low retention, yielding to heavy, viscous legs on the glass that signal its high alcohol content and sugar density.
Aroma. Intense and multi-layered, featuring rich bittersweet chocolate and espresso roast. High spirit-forward notes of bourbon and charred oak from Willett barrels are prominent, intertwined with pungent cinnamon spice and creamy vanilla. Deep aromas of maple syrup add a caramel-like sweetness, supported by moderate esters of dried figs and raisins.
Taste. The initial impression is an explosion of dark roasted malt, cocoa, and sweet maple syrup. The mid-palate introduces spicy cinnamon and woody tannins from the double barrel aging process. Alcohol warmth is significant but smooth, complementing the vanilla's richness. Bitterness is medium-high but remains subordinate to the dense malt and adjunct sweetness, finishing with a long, lingering trail of bittersweet chocolate, maple, and oak.
Mouthfeel. Extremely full-bodied, chewy, and viscous with a velvety, luscious texture. Low carbonation. A pronounced, smooth alcohol warmth glows in the chest, without being sharp or solventy.
