Serps Sidra Somnis is a vibrant, artisanal cider defined by the marriage of poma and codony. The aroma is highly expressive, led by the floral, honeyed perfume of fresh quince layered over rustic, fermented apple notes. On the palate, a crisp apple acidity is immediately met by the complex, slightly tannic structure of the quince, lending an elegant astringency and a deep, wax-like fruit richness. Fermented naturally, it exhibits a clean yet wild character, finishing exceptionally dry with a lingering orchard floor essence. It captures the essence of a Specialty Fruit Cider with sophisticated fruit integration and a refined, Mediterranean character.
Appearance. Pale gold (SRM 3-4) with brilliant clarity; thin, fleeting white head that dissipates quickly; minimal lacing.
Aroma. High intensity; dominant notes of floral quince, beeswax, and ripe yellow apple; subtle earthy wild yeast notes; clean fermentation without sulfur or unpleasant phenols.
Taste. Initial sharp malic acidity from the apples; mid-palate reveals the unique, perfumed flavor of quince and a hint of pear; zero hop bitterness; bone-dry finish with lingering tartness and a pleasant, woody fruit-skin aftertaste.
Mouthfeel. Medium-light body; moderate carbonation; very light, well-integrated alcohol warmth; noticeable but pleasant tannic astringency from the quince addition.
