Wat blijft, als alles voorbijgaat? Voor ons – Willem en Koen – is het antwoord simpel: de kwaliteit van onze passage. Wat we doen, moet kloppen. Niet alleen in het glas, maar ook in hoe we omgaan met onze streek, ons ambacht en elkaar.
We hebben de liefde voor Lambiek en Geuze vanuit onze Pajotse roots, vanuit onze opvoeding. Dat erfgoed willen we niet alleen bewaren, maar ook doorgeven – met bier dat de tijd trotseert, gemaakt volgens eeuwenoude traditie én met een frisse blik.
Brouwen is voor ons het mooiste ambacht ter wereld. Het vraagt geduld, vakmanschap en respect voor de natuur. En als ons bier, na jaren rijping, ergens opengaat en iemand ervan geniet… dan is dat onze beloning.
