This vibrant Witbier reimagines the classic Belgian style through a wild, botanical lens. Sacrilège Suspension pours a signature cloudy straw-yellow, immediately releasing a bright, zesty aroma of fresh tangerine and the peppery, herbal perfume of basil. The bready, grainy character of unmalted wheat provides a soft foundation for the house culture’s contributions, introducing a whisper of wild yeast funk and a delicate lactic snap. On the palate, the tangerine sweetness is expertly balanced by savory basil notes and a crisp, dry finish. High carbonation makes this 4.5% ale exceptionally refreshing, blending traditional spice with modern wild fermentation complexity.
Appearance. 2–4 SRM. Very pale straw to deep yellow. Cloudy, milky-yellow appearance from suspended yeast and starch. Dense, white, moussy head with excellent retention.
Aroma. Moderate intensity. Grainy, bready wheat malt mixed with distinct, zesty tangerine citrus. The basil provides a prominent herbal, peppery, and slightly spicy aromatic layer. Low background notes of earthy wild yeast funk and a hint of lactic tartness from the house culture.
Taste. Initial impression of bready, honeyed malt followed quickly by bright tangerine fruitiness. The basil adds a complex savory and herbal dimension, replacing traditional coriander. Bitterness is low, allowing the crisp, slightly tart fermentation character to shine. Finishes very dry and clean with lingering citrus and herbal notes.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the wheat. High, effervescent carbonation provides a prickly, refreshing sensation. No alcohol warmth; no astringency.
