As a session-strength farmhouse ale, it emphasizes high drinkability with a rustic grain bill that highlights soft wheat. The addition of hibiscus flowers transforms the sensory profile, introducing delicate floral aromas and a bright, berry-like tartness that complements the spicy, peppery esters of the Belgian yeast. Effervescent and bone-dry, it offers a sophisticated interplay between soft cereal malts and botanical elegance. The result is a highly attenuated, crisp ale with a clean finish, perfectly capturing the pastoral spirit of the style with a floral twist.
Appearance. Presents a unique pale pink to light ruby hue (8-12 SRM) with a slight hazy brilliance characteristic of a wheat-heavy grist. It is topped by a dense, rocky, white-to-faintly-pink head with excellent retention and Belgian lacing.
Aroma. Moderate intensity featuring a pleasant aromatic mix of spicy black pepper yeast phenols and fruity esters reminiscent of lemon and red currants. The hibiscus adds a distinct floral, herbal, and slightly cranberry-like character. Low grainy malt and soft earthy hops support the botanical notes.
Taste. Initial impression is crisp and dry. Soft, grainy wheat malt provides a delicate foundation for medium-low spicy yeast notes and floral hibiscus flavors. Bitterness is moderate but perceived as firm due to the very high attenuation and a slight, refreshing acidity from the flowers. The finish is bone-dry and effervescent with a lingering floral and peppery aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a prickly, refreshing sensation. No alcohol warmth is present, and the beer exhibits a slight, pleasant floral astringency and a soft creaminess from the wheat.
