This exceptional Flanders Red Ale presents a masterful orchestration of wild fermentation and fruit maceration. Two years of maturation in oak foeders provides a structural backbone of vanilla and soft tannins, further complexified by a six-month infusion of fresh cherries, raspberries, and cranberries. The result is a profoundly vinous profile reminiscent of a fine red Burgundy. Deep layers of red fruit acidity intermingle with sophisticated notes of violets, leather, and blonde tobacco, all underpinned by a subtle caramel malt sweetness. It is a refined, multi-layered ale where the bright, tart fruit character and wood-aged depth create a long, pure, and elegant finish.
Appearance. Deep burgundy to ruby-red with brilliant clarity. Pours with a fine-textured, light pinkish-tan head that shows moderate retention and leaves delicate lacing.
Aroma. High intensity and deeply complex. Dominant notes of fresh raspberries, tart cherries, and cranberries lead the profile. Beneath the fruit, aged balsamic and oak-derived vanilla emerge alongside sophisticated earthiness, including leather and blonde tobacco. A delicate floral hint of violets adds a perfumed top note, while subtle toasty malt and caramel provide a grounding base.
Taste. The initial impression is a sharp, clean fruit acidity featuring intense red berry and stone fruit flavors. Mid-palate reveals a soft, toasty malt richness and caramel sweetness that balances the lactic and slight acetic tartness. Oak maturation contributes wood tannins and a dry, wine-like structure. No hop flavor or bitterness is present. The finish is long, dry, and elegantly acidic, with lingering notes of cranberry and dark fruit skin.
Mouthfeel. Medium body with a prickly, refreshing carbonation. A noticeable tannic astringency from the oak and fruit skins provides a firm structure. Deceivingly crisp and light on the palate despite the 7% ABV, which offers only a gentle, well-integrated warmth.
