Põhjala Kirsiraks is an evocative Wild Specialty Beer that highlights the vibrant duality of its star ingredient. By utilizing both sweet and tart cherries, the beer achieves a complex fruit profile ranging from deep, jammy stone fruit to sharp, bright acidity. At a sessionable 4% ABV, the palate is exceptionally refreshing, driven by a clean lactic sourness that cuts through the rich red berry esters. Appearance. Pours a deep ruby to hazy pinkish-red (SRM 10–18) with a moderate, pink-tinted head that shows moderate to low retention. The body exhibits a slight haze, typical of unfiltered fruit additions.

Aroma. High intensity of fresh cherries, blending almond-like sweetness with the sharp, acidic punch of tart varieties. A clean, lemony lactic sourness dominates the background, with very low earthy fermentation notes and no detectable hop aroma or malt sweetness.

Taste. Initial impression is a sharp, refreshing acidic tang followed immediately by a flood of authentic cherry flavor. The sweetness of the fruit is largely fermented out, leaving behind tart esters and a subtle hint of fruit pit. Hop bitterness is absent, allowing the acidity to provide the primary balance. The finish is very dry and clean with a lingering, tart cherry aftertaste.

Mouthfeel. Light body with a prickly, high carbonation that accentuates the sourness. A slight tannic astringency from the cherry skins provides a delicate structure and enhances the dry sensation. Alcohol warmth is non-existent.
