Pizza Port Kook DIPA
This quintessential West Coast Double IPA captures the vibrant San Diego spirit with a pale straw hue and a laser-focused hop profile. An exuberant aromatic burst of tropical fruit and juicy grapefruit is driven by a complex blend featuring dominant Chinook alongside Amarillo, El Dorado, CTZ, and Hull Melon. On the palate, pineapple and citrus notes take center stage, supported by a restrained malt character that ensures the hops remain the focus. True to its regional roots, the finish is bone dry and crisp, delivering a firm bitterness that lingers cleanly without being harsh. It is a masterful, high-intensity expression of modern hopping.
Appearance. Pale straw to light gold (6-8 SRM). Brilliant clarity with a moderate-sized, persistent white head that leaves tight lacing on the glass.
Aroma. High intensity. Dominated by aggressive grapefruit, resinous pine, and spicy undertones from Chinook and CTZ. These are layered with sweeter notes of pineapple, melon, and tropical fruit from El Dorado and Hull Melon. Malt is neutral and very low in the background.
Taste. Initial punch of citrus peel and tropical fruit. Hop flavors of grapefruit and pineapple are prominent. Very high bitterness, yet smooth and well-integrated. The malt flavor is clean and soft, providing just enough structure before a sharp, bone-dry finish with a lingering resinous aftertaste.
Mouthfeel. Medium-light body with a crisp, smooth texture. High carbonation enhances the dry finish. A restrained, warming alcohol presence is noticeable but lacks any harshness or solvent notes.
