PINTA Barrel Brewing

This Imperial Stout presents an opulent sensory journey, shaped by a 20-month residency in Willett, Buffalo Trace, and Cognac barrels. The nose is greeted by a high-intensity bouquet of vanilla bean, charred oak, and dark espresso. On the palate, a velvety layer of bittersweet chocolate and blackstrap molasses meets the sophisticated, vinous influence of the Cognac barrels and the spicy caramel depth of premium bourbon. The mouthfeel is exceptionally full and chewy, with a lingering warmth reflecting its 13% ABV. Complex notes of dried figs and toasted coconut emerge as it warms, concluding in a rich, harmonious, and slightly sweet finish.

Appearance. Jet black and opaque (40+ SRM). A persistent, deep tan head provides light lacing, while high viscosity and alcohol are evidenced by slow-moving legs on the glass.

Aroma. High intensity. Dominant roasted malt character featuring dark chocolate and roasted coffee beans. The barrel aging contributes strong bourbon-like notes of caramel and toasted oak, alongside a distinct fruity, vinous Cognac character. Significant aromatic vanilla presence blends with light esters of raisin and prune. Alcohol is noticeable but smooth and well-integrated.

Taste. Initial impression is thick and intensely flavorful. Deep roasted grain flavors of cocoa and charred toast are balanced by a moderate bitterness that prevents cloying. The barrel influence is profound, offering layers of spicy bourbon, sweet vanilla, and rich grape-like Cognac notes. Mid-palate flavors of dark fruit like figs and black currants lead into a long, warming finish with a lingering bittersweet chocolate aftertaste.

Mouthfeel. Full to very full-bodied with a luscious, viscous, and velvety texture. Carbonation is low, enhancing the beer’s chewiness. A significant, smooth alcohol warmth is present, providing a comforting heat without being sharp or solventy.
