This Brett Beer exhibits an intricate profile where time has transformed primary fruit into deep, rustic funk—reminiscent of wet hay and seasoned leather. The elderflower addition introduces a vibrant floral counterpoint, contributing nuances of white blossoms and a musky, honey-like sweetness that softens the bone-dry finish. Effervescent and exceptionally crisp, the palate navigates a refined balance between earthy fermentation complexity and botanical elegance, resulting in a mature, multifaceted wild ale that highlights a unique botanical terroir.
Appearance. Deep gold to light amber (6-9 SRM). Pours with a white, frothy head that displays moderate retention and light lacing. Displays a slight haze, typical of a long-aged wild ale infused with botanicals.
Aroma. High intensity with complex barnyard funk, including notes of horse blanket, damp hay, and earthy leather from three years of Brett maturation. These rustic qualities are layered with a concentrated floral perfume of elderflower, offering hints of lychee, wildflower honey, and dried herbs.
Taste. The initial impression is bone-dry and highly attenuated. Dominant flavors of aged wood, leather, and earthy spice are provided by the wild yeast, while the hand-foraged elderflowers offer a bright, floral lift and botanical musk. Bitterness is very low, supported by a subtle, non-lactic tartness. The finish is remarkably clean, crisp, and lingeringly dry.
Mouthfeel. Medium-light body with a lively, high carbonation that creates a prickly, effervescent sensation. Very low alcohol warmth that is well-integrated. No perceptible astringency, finishing with a smooth yet highly attenuated texture.
