Shanghai Noon is a vibrant American IPA that exemplifies the West Coast style through an intensive double dry-hopping process. The aromatic profile is dominated by a complex interplay of Eclipse and Amarillo, offering bright notes of mandarin and citrus zest, while the classic trio of Chinook, Cascade, and Centennial provides a firm backbone of resinous pine and floral grapefruit. A lean, grainy malt base allows these hop characteristics to remain the focal point, finishing with a crisp, refreshing dryness. The palate experience is defined by an assertive bitterness that lingers pleasantly, balanced by a clean fermentation and a smooth, medium-bodied texture.

Appearance. Brilliant clarity with a deep gold to light amber hue; supports a persistent, frothy off-white head that leaves significant lacing.

Aroma. High intensity hop aroma featuring prominent mandarin, grapefruit, and lemon zest, backed by a resinous pine and spicy floral character. Clean, low grainy malt sweetness in the background with no detectable diacetyl.

Taste. Initial hop-forward impact of citrus peel and forest pine, followed by a medium-high bitterness that is firm but not harsh. Low toasted malt flavors provide a clean, supportive base. The finish is dry and crisp with a lingering hoppy aftertaste.

Mouthfeel. Medium-light to medium body with a smooth, non-astringent texture. Medium-high carbonation provides a crisp mouth-cleansing effect; very light, well-integrated alcohol warmth.
