This vibrant Wild Specialty Beer captures the essence of a pink lemonade through a sophisticated lens. Fermented with a fresh sour mixed culture, the profile is defined by a zesty, high-toned brightness. Authentic Sicilian lemons provide an aromatic citrus punch, while Scottish raspberries contribute a delicate red-fruit tartness and a beautiful rosy hue. The palate is bone-dry and effervescent, balancing the sharp lactic acidity of the mixed culture with the natural tannins and esters of the fruit. It is a refreshing, complex interpretation of a summer classic, where the wild fermentation characteristics seamlessly integrate with the intense fruit character.
Appearance. Pale pink to salmon-hued with a slight haze. Forms a fizzy, light pink head that dissipates fairly quickly, leaving a thin ring of lacing.
Aroma. High intensity aromatics of freshly squeezed lemon and tart raspberry skin. A distinct lactic sourness and light earthy funk from the mixed culture are present, with no hop aroma and very low neutral malt.
Taste. Sharp, refreshing acidity dominates the initial impression. Clear flavors of Sicilian lemon juice and unripe Scottish raspberries lead into a bone-dry, clean finish. Hop bitterness is negligible, while the mixed culture provides a lingering, slightly funky and acidic aftertaste.
Mouthfeel. Light-bodied and highly carbonated, creating a prickly, effervescent sensation. No alcohol warmth is perceived. A very slight astringency from the fruit skins enhances the overall dryness.
