A sophisticated Dark Wild Ale that reimagines the Black Forest gateau through a rustic, fermented lens. Deep mahogany and ruby hues set the stage for a complex interplay between rich cacao nibs and the bright, tart snap of Kent cherries. The house mother culture introduces layers of earthy Brettanomyces funk—reminiscent of wet hay and subtle leather—that elegantly cut through the underlying dark malt structure. Despite its 8% ABV, the high attenuation characteristic of Brett Beer ensures a surprisingly nimble, dry finish, where lingering notes of bitter dark chocolate and stone fruit acidity dance against a funky, barnyard backdrop.

Appearance. Deep mahogany to near-opaque dark brown (SRM 35+) with brilliant ruby highlights when held to light. Pours with a moderate tan head that shows fair retention and leaves light lacing on the glass.

Aroma. High intensity featuring a complex blend of dark chocolate from cacao nibs and sharp, acidic Kent cherries. Distinctive wild yeast character presents as earthy funk, leather, and barnyard, supported by a moderate toasted malt backbone with hints of coffee.
