Ophiussa Brewing Co.

Reverence is a decadent Imperial Stout that marries deep roasty complexity with exotic layers of heat and spice. The ten-month rest in Casa Del Sol mezcal barrels imparts a unique vegetal smoke and agave sweetness, while the addition of Ají Panca chilli from Peru introduces a subtle, earthy warmth. Rich cacao nibs from Ghana provide a dark chocolate foundation, uplifted by the creamy, floral sweetness of Madagascar vanilla beans. This 10% ABV ale presents a harmonious balance of roasted malt bitterness and rich, velvety textures. It is an assertive yet smooth expression, where the traditional dark fruit esters of the style dance with the piquant linger of the Peruvian peppers.

Appearance. Jet black and opaque (SRM 40+). It pours with a dense, dark tan head that shows moderate retention. Visible viscosity is apparent in the glass, leaving thick, oily legs.

Aroma. High intensity. Dominated by dark chocolate and cocoa from the cacao nibs, followed by the smoky, herbal notes of mezcal. Madagascar vanilla adds a sweet, creamy top note. Underlying malt aromas of roasted coffee, black licorice, and toasted bread are present, alongside dark fruit esters like raisins. The Ají Panca chilli contributes a mild, dried-pepper earthiness. Alcohol is noticeable but smooth.

Taste. The initial impression is a rich, bittersweet chocolate and dark malt richness. Mid-palate reveals the mezcal's unique agave character and a subtle wisp of smoke. Ghana cacao nibs reinforce the dark chocolate flavor, while the Ají Panca chilli provides a slow-building, spicy warmth. Bitterness is firm but balanced by the vanilla’s sweetness and the malt’s caramel-like depth. The finish is long and complex, transitioning from roasty bitterness to a lingering chili heat and vanilla bean sweetness.

Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is moderate. A significant but gentle alcohol warmth is present, complemented by the physical heat from the chillies. Low astringency.
