This Wild Specialty Beer presents a decadently layered sensory profile, merging the sharp acidity of wild fermentation with dessert-like indulgence. Deep, jammy aromas of Black Currant and Sweet Cherry lead the experience, immediately countered by the rich, earthy depth of Cholaca Chocolate and fragrant Vanilla. The wild character provides a subtle, rustic funk that enhances the fruit's complexity. On the palate, the natural tartness of the berries is softened by the silky, rounded sweetness of Milk Sugar, creating a velvety texture. It is a balanced interplay of bright acidity and cocoa-driven richness, finishing with a lingering, fruit-forward elegance.
Appearance. Deep burgundy to dark purple (28-32 SRM) with a vibrant, pink-tinted head that shows moderate initial height but fades to a thin collar. The beer is opaque and viscous, reflecting the heavy additions of fruit puree and milk sugar.
