This Wild Specialty Beer offers a refreshing sensory experience, centering on the delicate interplay between floral Oolong Tea and sun-ripened nectarines. On the nose, bright stone fruit notes of fresh nectarines mingle with the earthy, slightly toasted aromatics of Oolong, supported by a clean, lactic tartness. The palate follows with a sharp, refreshing acidity that amplifies the nectarine's natural zest, while the tea contributes a subtle, structured tannin and herbal depth. Finishes bone-dry and crisp, making it an ideal choice for summer. The wild fermentation provides a faint, rustic complexity that tethers the fruit and botanical elements together without overwhelming the senses.
Appearance. Pours a hazy, golden-orange hue reminiscent of nectarine flesh (SRM 6-8). Features a thin, white head with poor retention, typical of acidic styles, leaving minimal lacing.
Aroma. High intensity aromatics of fresh, juicy nectarines and stone fruit. Secondary notes of earthy, floral Oolong Tea provide a botanical counterpoint. A clean lactic sourness is present, with very low funky esters from the wild fermentation and no hop aroma.
Taste. The initial impression is a bright, puckering tartness. Dominant flavors of fermented nectarines provide a tangy fruit character, while the Oolong Tea adds a mid-palate complexity of dried herbs and subtle woodiness. Bitterness is very low, as the profile is driven by acidity. The finish is very dry and clean with a lingering stone fruit aftertaste.
Mouthfeel. Light-bodied with high carbonation that produces a prickly, effervescent sensation. A very slight tannin-driven astringency from the tea and nectarine skins adds structure. No significant alcohol warmth.
