This Wild Specialty Beer is an approachable and vibrant fruit-forward refresher. A generous addition of mangos, peaches, and nectarines provides a lush, tropical, and stone-fruit core that harmonizes with a clean, tangy wild fermentation. The bright acidity lifts the succulent fruit notes, creating a crisp and highly drinkable character. Subtle funk and a bone-dry finish ensure it remains a quintessential summer thirst-quencher, stripping away the intimidation of the sour category while delivering an expressive sensory profile of sun-ripened fruit and refreshing tartness.
Appearance. Pours a hazy, pale orange to apricot color (SRM 4-6) with a thin, white head that dissipates quickly, leaving minimal lacing.
Aroma. High intensity aromatics of ripe mango, fresh peaches, and fuzzy nectarines dominate. Underlying these are light lactic tartness and very subtle earthy funk, with no significant hop or malt aroma.
Taste. The initial impression is a burst of tart tropical mango and juicy stone fruit. A crisp, lactic acidity provides a firm backbone, balancing the perceived fruit sweetness. Malt flavor is low and cracker-like, while hop bitterness is negligible. The finish is very dry and clean with lingering peach esters.
Mouthfeel. Light-bodied with high carbonation that creates a prickly, refreshing sensation. Very low alcohol warmth and no astringency, providing a smooth yet effervescent texture.
