This elevated American Stout presents a profound sensory depth, marrying aggressive roast with the sophisticated influence of Romanian Oak. The initial impact is dominated by dark chocolate and roasted coffee beans, quickly giving way to the rich, jammy essence of added plums. The time spent in Cabernet Sauvignon and Merlot barrels infuses the profile with dark berry notes and a structured, vinous tannin that balances the malt sweetness. High-intensity esters of dark stone fruit and a smooth, 10% alcohol warmth define the experience, while the oak provides a dry, woody finish that lingers alongside a persistent resinous hop character.
Appearance. Jet black and entirely opaque (40+ SRM); crowned by a thick, persistent, light brown head with excellent lacing.
Aroma. High intensity of roasted coffee and bittersweet chocolate; secondary notes of dark plum, blackberry, and red wine from the Cabernet Sauvignon and Merlot barrels. Subtle resinous hops and a smooth alcohol presence are complemented by a hint of toasted Romanian Oak.
Taste. Bold initial impression of espresso and charcoal-edged malt, followed by rich plum and dark fruit complexity. Medium-high bitterness balances the low-medium malt sweetness. The wine barrel aging contributes dry tannins and a subtle tartness, leading to a lingering, medium-dry finish with a lightly burnt grain quality.
Mouthfeel. Full-bodied and viscous with a creamy texture. Carbonation is medium-high, providing a lively lift against the density. Noticeable but smooth alcohol warmth with a slight, pleasant astringency from the oak and roasted grains.
