This Wild Specialty Beer presents a unique sensory fusion of savory herbs and bright citrus. The profile is defined by the distinctive, earthy, and celery-like aromatics of Lovage, which intertwine with the sharp, zesty punch of Lemons to create a singular 'umami' character. A crisp lactic acidity provides the structural backbone, allowing the savory herbal qualities to resonate against a refreshing tartness. The fermentation character is clean yet assertive, highlighting the specialty ingredients over malt or hop influence. It concludes with a bone-dry, effervescent finish that leaves a lingering impression of garden-fresh herbs and zesty lemon pith.

Appearance. Straw to light gold (3-5 SRM). Hazy to translucent with a thin, bright white head that dissipates rapidly; minimal lacing due to acidity.

Aroma. High intensity. Dominant lemon zest and fresh-cut lovage, exhibiting celery, anise, and parsley-like notes. Clean lactic tartness with a subtle sourdough malt background; no hop aroma.

Taste. Initial impression is sharp, refreshing lemon acidity followed by a deep, savory herbal mid-palate from the lovage. Negligible malt sweetness and zero hop bitterness. The balance is heavily tilted toward acidity and herbal complexity. Finish is very dry and clean with a lingering lemon-skin tartness.
