This modern West Coast American IPA is an exhaustive exploration of the Cascade hop, delivering an intense sensory experience through total hop saturation. Bold aromas of grapefruit zest, floral blossoms, and resinous pine dominate the profile, supported by a clean, lean malt backbone. The palate is saturated with layered citrus oils and a touch of spicy earthiness, characteristic of the US, Australian, and New Zealand Cascade varieties utilized. A firm, assertive bitterness provides structural integrity, leading to a dry, resin-flecked finish. It balances traditional pine-forward roots with contemporary vibrancy, showcasing a complex hop character that feels both nostalgic and innovative.
Appearance. Brilliant clarity with a deep gold color (SRM 7). Pours with a dense, persistent off-white head that leaves intricate lacing on the glass.
Aroma. Intense hop-forward bouquet featuring pungent grapefruit, orange peel, and fresh pine needles. Secondary notes of floral spice and subtle tropical melon emerge, backed by a very low, clean, grainy malt sweetness. Fermentation is clean with negligible esters.
Taste. Initial hop impact is high, showcasing vibrant citrus zest and resinous wood. Medium-low pale malt provides a neutral canvas for the aggressive hop character.
