This Double IPA is a collaboration between Omnipollo and Monkish Brewing, delivering an intensely pungent and dank sensory profile. The pour reveals a deep gold hue with a persistent off-white head. Aromatically, it leads with aggressive notes of resinous pine and tropical fruit, layered over a unique, subtle sweetness of honeyed Graham Crackers. On the palate, a firm bitterness balances a clean malt base, where the Graham Crackers contribute a light toasted biscuit character without cloying sweetness. The finish is dry and lingering, showcasing the hop-forward character, while the 8.2% alcohol provides a smooth, integrated warmth typical of the style.

Appearance. Deep gold to light orange-copper (SRM 8-10). Displays a slight haze with a moderate-sized, persistent, off-white head that leaves excellent lacing.

Aroma. High intensity hop aroma featuring pungent dankness, resinous pine, and bright citrus zest. A distinct background note of Graham Crackers offers hints of honey and toasted grain, supporting a neutral fermentation profile.

Taste. Strong and complex hop flavors of tropical fruit and resin are met with a moderately high bitterness that remains smooth. A clean, supportive malt character is enriched by a subtle Graham Cracker toastiness. The finish is medium-dry with a lingering hoppy aftertaste and no harshness.

Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate-high. A restrained, smooth alcohol warmth is present, and there is no hop-derived astringency.
