Yvonne presents a sophisticated evolution of the traditional Weissbier, enriched by twelve months of maturation in Sauternes barrels. The classic yeast-driven profile of ripe banana and spicy clove is elegantly layered with the honeyed, vinous nuances of the dessert wine casks, introducing notes of dried apricot, peach, and soft oak. A blend of fresh witbeer provides a vibrant, youthful counterpoint to the barrel's depth. The result is a complex, aromatic dance between bready malt, tropical esters, and a refined, slightly acidic finish, making this grown-up wheat beer as suitable for fine dining as it is for the dancefloor.
Appearance.3–5 SRM. Hazy, pale gold with a luminous sheen. Features a thick, moussy, and long-lasting white head with dense lacing.
Aroma.High intensity; prominent banana and clove yeast esters are balanced by sophisticated Sauternes notes of honey, peach, and a hint of vanilla-oak. Low bready, doughy wheat and a faint herbal hop presence provide a solid foundation.
Taste.Initial impression of soft bready wheat and spicy clove, followed by a mid-palette of honeyed apricot and white grape from the Sauternes influence. Very low bitterness provides a smooth, rounded foundation. Finishes relatively dry and effervescent with a lingering vinous complexity and subtle wood character.
Mouthfeel.Medium body with a creamy, fluffy texture that never feels heavy. High carbonation leads to a spritzy, refreshing finish. Light vinous warmth is present but expertly integrated.
