This indulgent Tiramisu Stout, crafted for the Dark & Wild festival, offers an ultra-rich sensory profile designed to replicate the classic Italian dessert. A complex malt bill from Bairds provides a thick, velvety foundation of toasted biscuit and dark caramel. Intense additions of fresh coffee from Chipp Coffee Co. and decadent cocoa from York Cocoa House dominate the palate, delivering layers of espresso and bittersweet chocolate. While rooted in the American Stout style, its 8.4% ABV provides a smooth, integrated warmth that carries the decadent sweetness through a long, luxurious finish marked by lingering mocha and creamy vanilla notes.
Appearance. Jet black and completely opaque (40 SRM). Pours with a large, persistent, and dense head of deep tan to light brown foam that leaves significant lacing on the glass.
Aroma. High intensity aroma dominated by roasted coffee and dark chocolate. Secondary notes of toasted grain, caramel, and a hint of vanilla bean. Very low resiny hop aroma is buried beneath the rich dessert-like scents, with light fruity esters and a smooth, clean alcohol presence.
Taste. Initial impression is rich and sweet, featuring bold flavors of espresso, bittersweet cocoa, and toasted ladyfingers. The Bairds malt contributes deep caramel and roasted notes. Medium-high bitterness is present but tempered by the thick body, resulting in a balanced-sweet profile. Finish is long and decadent with a lingering mocha aftertaste and very low citrusy hop character.
Mouthfeel. Full-bodied and exceptionally viscous, possessing an ultra-thick, creamy texture. Carbonation is moderate. Noticeable but smooth alcohol warmth provides a pleasant glow without being harsh. Very low roast-derived astringency.
