Fermented with a wild house culture and infused with roasted chestnuts, it offers a sophisticated interplay between earthy nuttiness and rustic funk. The aroma is a tapestry of dark dried fruits and subtle leather, while the palate reveals a bone-dry finish typical of high Brett attenuation. Roasted chestnuts provide a delicate savory depth that anchors the bright, vinous acidity and spicy yeast phenols, resulting in a lean, refreshing, yet soul-warming dark wild ale.

Appearance. Deep mahogany to dark brown (22-30 SRM) with ruby highlights. Topped with a moderate, tan-colored head that shows fair retention and light lacing. Slight haze is present, consistent with a wild fermentation.

Aroma. Moderate-high intensity featuring a blend of dark fruit esters like plum and black cherry. Distinctive earthy and nutty notes from roasted chestnuts meld with Brett-derived funk, including wet hay and light leather. Low toasted malt character of bread crust and light cocoa persists in the background.

Taste. Initial impression is bone-dry and tart. Malt flavors include toasted biscuit and a savory, earthy nuttiness from the roasted chestnuts. Hop character is minimal, with low bitterness that allows a light, vinous acidity to shine. Fermentation character is complex, offering notes of red apple skins and rustic funk. The finish is very dry, clean, and lingering with a touch of woodsy earthiness.

Mouthfeel. Medium-light body, thinned slightly by high Brett attenuation. Moderate-high carbonation provides a prickly, refreshing effervescence. Very low alcohol warmth and a clean, non-astringent mouthfeel despite the use of chestnuts.
