Nevel Bries is a sophisticated Wild Specialty Beer, aged for 25 months in oak barrels to cultivate a profound depth of character. This golden sour highlights foraged sea buckthorn and spruce, weaving a complex sensory tapestry. The aroma is an evocative blend of wild funk, resinous pine, and bright citrus. On the palate, lush fruit acids from the sea buckthorn provide a sharp, refreshing tartness, balanced by round, pithy orange notes. The inclusion of sea buckthorn branches introduces a subtle, elegant tannic structure, while the spruce delivers a clean, piny finish that lingers gracefully against the dry, woody backdrop of the oak.
Appearance. Deep gold to orange-amber (SRM 6-9) with a slight, persistent haze. The head is off-white with moderate to low retention, typical of high-acid barrel-aged beers, leaving fine lacing.
Aroma. High intensity with a complex wild character featuring earthy funk and leather. Resinous spruce notes are prominent, integrated with the sharp, tropical, and citrus-like scent of sea buckthorn. Subtle aged oak and vanilla undertones emerge as it warms.
Taste. Initially sharp with a clean lactic acidity. Dominant flavors of tart sea buckthorn—reminiscent of sour orange and passionfruit—are layered over a resinous, piny spruce core. The oak aging contributes a dry, woody complexity and faint vanilla. High attenuation results in a bone-dry finish with a mild, branch-derived tannic grip and a lingering citrus aftertaste.
Mouthfeel. Medium-light body with a crisp, effervescent carbonation. A mild tannic astringency provides structure without being harsh. Alcohol warmth is very low and well-integrated.
