Bitter Sweet Symphony is an assertive Double West Coast IPA that delivers a resonant hop-forward profile. The 8% ABV provides a smooth foundation for a complex blend of New Zealand and US hops. Riwaka and Motueka contribute vibrant zesty citrus and lime, while Simcoe, Citra, and Mosaic add layers of resinous pine and ripe tropical fruit. A sturdy malt backbone, crafted from Golden Promise, American Ale, and Munich malts, provides a clean, grainy sweetness, while Malted Oats ensure a polished texture. It finishes with a crisp, lingering bitterness, balancing the bold intensity with a clean, dry, and rhythmic drinkability.

Appearance. Deep gold to pale copper (SRM 7-9). Brilliant clarity with a dense, persistent off-white head that leaves significant lacing on the glass.

Aroma. High intensity. A complex bouquet of grapefruit, lime zest, and passionfruit from Citra and Motueka, underscored by piney resin and earthiness from Simcoe. The malt presence is low, offering subtle notes of honeyed grain and light biscuit from the Golden Promise base. Clean fermentation profile with a hint of smooth alcohol sweetness.

Taste. Explosive hop flavors mirror the aroma, leading with tropical mango and sharp citrus. Firm, high bitterness provides a crisp, structural punch without being harsh. A supportive, clean malt profile features light toast and bread crust from the Munich malt. It finishes very dry and clean with a long-lasting, resinous hop aftertaste.

Mouthfeel. Medium body with a smooth, slightly creamy texture derived from the Malted Oats. Moderate-high carbonation provides a lively, refreshing scrub on the palate. A gentle, well-integrated alcohol warmth is present but remains smooth and refined.
