This Belgian Dubbel presents a rich, dark amber profile rooted in monastic tradition. Deep specialty malts lead the experience, offering intense caramelized sugar notes and hints of toasted bread. The fermentation character introduces a sophisticated bouquet of dried fruits—think raisins and dark plums—complemented by a delicate, peppery spiciness. While the malt remains the centerpiece, a measured hop bitterness provides a clean balance against the perceived sweetness. Appearance. Dark amber to deep copper with a distinct reddish hue (10–17 SRM). Topped by a large, dense, and long-lasting creamy off-white head; generally clear with a brilliant depth.

Aroma. Moderate to high intensity. Dominated by rich malts showcasing caramelized sugar, toast, and subtle chocolate. Esters provide a complex layer of dark fruit, specifically raisins and plums, alongside low peppery phenols. Hop aroma is nearly absent.

Taste. Initial malty richness featuring caramel and toasted malt sweetness. Complexity is enhanced by dried fruit esters and a hint of spicy, peppery phenols. Bitterness is medium-low, balancing the malt without overtaking it. The finish is moderately dry with a lingering malty and fruity aftertaste.

Mouthfeel. Smooth, medium to medium-full body. Medium-high carbonation provides a lively effervescence. Alcohol warmth is subtle and well-integrated, never becoming hot or solventy.
