This gold-medal-winning Double IPA offers an intense sensory journey defined by an aggressive hopping rate of Mosaic and Nelson Sauvin. The profile opens with a punch of tropical fruit, specifically ripe mango and passion fruit, layered with a distinct blueberry note driven by the Mosaic. Nelson Sauvin introduces a sophisticated layer of white grape and crushed gooseberry. Despite its 8.2% strength, the beer maintains a clean, dry finish characteristic of the West Coast style. A firm but smooth bitterness balances a lean, neutral malt backbone, ensuring the vibrant, resinous hop oils remain the primary focus throughout the experience.
Appearance. Brilliant clarity with a deep gold color (SRM 7). Pours with a moderate-sized, persistent white head that leaves thick lacing on the glass.
Aroma. High intensity hop aroma featuring prominent tropical fruit, blueberry, and crushed white grapes. A clean, neutral, grainy malt character supports the hops, accompanied by a light resinous note. No diacetyl or harsh sulfur; very clean fermentation.
Taste. Initial impression is a burst of tropical fruit and berry-like hop flavors. Medium-low crackery malt provides a soft foundation for the Mosaic-derived blueberry and Nelson Sauvin-derived gooseberry notes. Bitterness is firm and assertive but lacks harshness, finishing very dry with a lingering hoppy aftertaste.
Mouthfeel. Medium-light to medium body with a smooth, oily texture from the high hop concentration. Moderate carbonation. A well-integrated, restrained alcohol warmth is present but smooth.
