This Saison Cider Cask is a sophisticated blend showcasing Mills Brewing's mastery of barrel maturation. It pours with an effervescent energy, offering a bouquet where rustic, peppery yeast phenolics meet the distinct influence of seasoned cider casks. The blend reveals layers of bruised apple, damp oak, and a subtle, vinous character derived from the extended aging process. On the palate, expect a bone-dry, highly attenuated structure typical of a classic Saison, but elevated by a complex cider-led acidity and firm continental hop earthy notes. This is a masterful expression of time and wood, balancing farmhouse funk with elegant, orchard-fruit brightness.

Appearance. Color ranges from pale gold to deep amber with a slight haze. It features a long-lasting, dense, rocky ivory head with excellent lacing and high effervescence.

Aroma. High intensity with a mix of black pepper spiciness and pome fruit esters like bruised apple and pear. The cider cask adds a distinct woody, slightly tart character. Malt is light and grainy, while continental hops provide a low earthy and floral background.

Taste. Initial impression is bone-dry and rustic. Malt flavor is low and grainy, giving way to moderate hop bitterness and a complex tartness from the cider barrels. Yeast character provides peppery spice and citrus. The finish is very dry and lingering with a spicy aftertaste.

Mouthfeel. Medium body with very high carbonation and an effervescent quality. A light, well-integrated alcohol warmth is present, alongside a slight tannic dryness from the wood.
