Mills Brewing Draw Together

Draw Together is a masterfully blended Brett Beer that harmonizes three distinct barrel-aged components into a singular, vinous experience. The influence of Bordeaux barrels introduces deep tannins and dark berry notes, while White Burgundy barrels contribute a sophisticated orchard fruit brightness. A Hereford cider barrel-aged saison and a red rye sour base provide a backbone of rustic spice and sharp acidity. Expect a complex sensory journey featuring notes of weathered oak, dried apricot, and leathery funk, underscored by a peppery rye grain character. It finishes bone-dry with a lingering, elegant tartness and sophisticated barrel-derived complexity.
Appearance. Deep amber with copper and ruby highlights (SRM 14-18). Pours with a fine-beaded, off-white head that shows moderate retention and delicate lacing. Clarity is slightly hazy, typical of a long-aged, blended wild ale.
Aroma. High intensity and profoundly complex. Immediate notes of earthy funk—reminiscent of damp hay and old leather—intertwine with rich vinous esters of red grape and tart apple. Subtle spicy rye notes and toasted oak provide depth, accompanied by aromas of dried stone fruits like apricot and plum.
Taste. An intricate initial impression of sharp, lemony acidity and dry oak tannins. Malt character is lean but present as spicy rye bread and soft caramel. Fermentation traits dominate, offering a cocktail of tropical fruit esters, farmhouse funk, and a cider-like tartness. Hop bitterness is low, providing just enough structure against the acidity. The finish is exceptionally dry and cleansing, with a lingering aftertaste of spiced fruit and vanillin.
Mouthfeel. Medium body with a crisp, highly carbonated texture that provides a lively prickle on the tongue. A gentle alcohol warmth is present but well-integrated. The presence of rye and wood tannins contributes a slight, pleasant astringency that enhances the dry finish.

"Draw Together is made from a blend of diverse beer styles from our aged barrel stock. This edition is a blend of two distinct barrel fermented beers: California chardonnay barrel-fermented strong golden ale, brewed in April 2020. Remarkably clean tasting from the barrel. Minimal funk and fairly low acididty. Fairly boozy on the nose, with hints of apricot and creamy American oak. Lots of interesting aromatics and satisfyingly rich, but a tad flabby on the palate. Bordeaux barrel fermented red rye beer, brewed in May 2022. Lots of sweet red fruit and a dry cocoa finish. A touch more acid than the golden ale, but still quite restrained. Fairly high barrel tannin, that when comined with the drying character from the roasted malts makes this barrel alone feel rather thin. Again, lots of interesting aromatics but not a complete drink on its own. The finished beer was primed with a good dose of sugar to produce lively carbonation, to give this fairly weighty beer an extra lift."
