It presents an intense sensory profile of sun-ripened apricots, accented by zesty tangerine and fuzzy peach aromas, layered over a subtle honey-like malt base. Oak barrel aging contributes a refined structure and faint woody depth, while the spontaneous fermentation delivers a distinctively funky, earthy complexity. The palate is defined by a sharp, fruit-forward acidity that leads into a bone-dry, tart finish. Despite the elevated strength, the experience remains crisp and refreshing, showcasing a harmonious blend of wild yeast character and concentrated fruit.
Appearance.Amber to deep orange hue (SRM 10-14); opaque with a significant haze. Pours with a thin, off-white head that dissipates quickly, leaving minimal lacing due to high acidity.
Aroma.High intensity of fermented apricot, accompanied by secondary notes of tangerine and peach. Distinctive lambic funk is present as barnyard, horse blanket, and earthy notes. A subtle honey-like malt sweetness and light oak-derived vanilla are detectable in the background. No hop aroma.
Taste.Leading with a sharp, puckering lactic acidity and intense apricot flavor. The mid-palate reveals complex fermentation characteristics including hay and goatish funk. Malt flavor is low, providing just enough structure to support the fruit. Bitterness is negligible (low IBU). The finish is remarkably dry and tart with a lingering stone fruit and mild oak tannin aftertaste.
