Baltic Porter 9 º
This Baltic Porter presents a decadent sensory profile, blending deep malt complexity with a subtle, spicy intrigue. Aromas of dark chocolate, molasses, and toasted hazelnuts intertwine with rich esters of plum and raisin. The palate is defined by a luxurious malt sweetness featuring caramel and toffee, which transitions into a smooth, Schwarzbier-like roast that avoids any burnt harshness. The addition of piments forts provides a delicate, earthy pepper note and a creeping warmth that complements the 9% ABV. It finishes with a refined, vinous quality, balancing the robust body against a clean, lingering dryness and a final, spicy flourish.
Appearance. Opaque dark brown with deep ruby highlights; topped by a thick, persistent, tan-colored head with excellent lacing.
Aroma. High intensity of rich maltiness, offering notes of deep toast, licorice, and dark chocolate. Moderate dark fruit esters reminiscent of prunes and black currants are present, alongside a faint, earthy chili pepper spice and a gentle, clean alcohol warmth.
Taste. Initial impressions of malty-sweet caramel and molasses quickly yield to a complex mid-palate of nutty toast and roasted coffee. The hop bitterness is medium-low, allowing the malt and spicy pepper heat to take center stage. Notes of dried cherries and raisins persist into a dryish, warming finish that leaves a hint of cocoa and a subtle peppery tingle.
Mouthfeel. Full-bodied and exceptionally smooth; medium-high carbonation provides a mouth-filling texture. A noticeable yet well-integrated alcohol warmth is enhanced by a light, spicy capsicum prickle on the back of the throat.

La Grande Révélation est une bière ambitieuse, qui mélange notre amour pour la bière ainsi que notre faible pour les sauces piquantes!
Alors la Grande Révélation, c’est d’un côté, un Porter baltique et de l’autre, un baril de sauce piquante ayant contenu la légendaire sauce Grande Réserve de nos amis de La Pimenterie. Une sauce qui a passé 18 mois dans un baril de bourbon (vous nous voyez venir).
On a donc assemblé de la Porter Baltique fraîche et de la Porter Baltique ayant passé 5 mois en baril de sauce piquante. Alors on retrouve un bel et surprenant équilibre entre le côté malté, chocolaté et confit du Porter baltique, tout en ayant l’aspect boisé et piquant du passage en baril de sauce piquante!
Clairement une de nos bières les plus « flyée » à ce jour, mais comme toujours : brassée à notre image!
