This Galician American IPA offers a unique herbal twist on a classic style. It features the distinctive Sorachi Ace hop, providing signature notes of lemon zest and a subtle hint of fresh dill. The addition of aromatic laurel adds a complex, woody spiciness that blends seamlessly with the bright, citrusy punch of lime zest. Visually inviting with a golden-amber hue, the palate is defined by a firm bitterness and a lean malt backbone. The finish is crisp and dry, leaving a lingering trail of resinous herbs and citrus oils, perfectly capturing the spirit of its namesake forest dweller.

Appearance. Medium gold to light reddish-amber (approx 8 SRM). Generally clear with a medium-sized, persistent off-white head and good lacing.

Aroma. High intensity hop and adjunct aroma. The Sorachi Ace hops lead with distinctive lemon and herbal dill notes, complemented by the spicy, earthy fragrance of laurel and the sharp, bright citrus of lime zest. Low grainy malt sweetness provides a neutral foundation, while fermentation remains clean.

Taste. Initial hop-forward impression with high bitterness. Flavors of lime peel and resinous pine are prominent, alongside the unique herbal character of laurel. Low toasted malt flavor supports the hop profile without adding significant sweetness. The finish is dry and clean with a lingering, crisp bitterness and a touch of woody spice.

Mouthfeel. Medium body with a smooth texture. Carbonation is medium-high, providing a lively prickle on the tongue. Alcohol presence is well-integrated with a very light, smooth warmth.
