This vibrant Double IPA radiates a bright West Coast energy, leading with an intense sensory profile of zesty lemon and sweet clementine. The expert application of Simcoe, Citra, and Idaho 7 hops creates a complex, layered experience where sharp pine needle and a solid, resinous dankness provide a robust counterpoint to the fruit. While the hop character is assertive, it remains anchored by a foundation of rich malt that provides enough body to balance the high bitterness. It finishes with a soft, lip-smacking, and lingering hop presence, maintaining high drinkability despite its significant strength and clean fermentation character.
Appearance. Deep gold to light orange-copper (7-9 SRM). Brilliantly clear with a moderate-sized, persistent off-white head that exhibits good retention and leaves fine lacing.
Aroma. High intensity hop aroma featuring prominent zesty lemon, clementine, and resinous pine. A distinct dankness is present, supported by a low, clean, grainy malt background. Fermentation is neutral with a very subtle, smooth alcohol note.
Taste. Initial impression is a wave of citrus and tropical fruit, specifically lemon zest and clementine. Strong hop flavors of pine and resin follow, supported by a low, clean bready malt character. Hop bitterness is firm and high but remains smooth and integrated. The finish is medium-dry with a lingering, pleasant hoppy aftertaste and no harshness.
Mouthfeel. Medium body with a smooth, even texture. Carbonation is medium-high, providing a crispness that aids drinkability. A restrained, smooth alcohol warmth is noticeable but well-integrated.
