A modern, lean interpretation of the American IPA, this collaboration with Docks Beers utilizes flaked rice and wheat to create a remarkably light and crisp foundation. Fermented with lager yeast for a clean, neutral profile, the beer showcases intense hop aromatics without malt interference. Vibrant notes of ripe peach and tropical fruit dominate the senses, driven by punchy hop additions. The result is a refreshing, 'crispy' experience that balances a firm bitterness with a bone-dry finish. At 6.5% ABV, it maintains excellent drinkability, emphasizing a bright, fruit-forward character and a snappy, clean fermentation that defines the Cold IPA sub-style.
Appearance. Pale straw to light gold (4-6 SRM). Brilliant clarity with a medium-sized, persistent white head that leaves fine lacing on the glass.
Aroma. High intensity hop aroma featuring pronounced peach, mango, and passion fruit. Very low, clean, grainy malt character from the rice and wheat. Clean fermentation profile devoid of esters or phenols.
Taste. Initial impression of punchy tropical fruit and stone fruit. Medium-high hop bitterness that is sharp but clean. Minimal malt flavor, providing a neutral, cracker-like backbone. Extremely dry finish with a lingering, crisp, hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate to high carbonation provides a refreshing bite. Very light, smooth alcohol warmth is present but well-integrated.
