This Imperial Stout presents an opulent sensory journey, deeply influenced by its 22-month maturation in Heaven Hill and Buffalo Trace bourbon barrels. The extended aging integrates intense notes of dark chocolate and espresso with luxurious layers of vanilla, toasted oak, and caramelized sugar. The profile is further enriched by dark fruit esters like figs and raisins, which meld seamlessly with the spirituous warmth of the bourbon. Velvety and viscous on the palate, it balances the heavy roast of the malt with a refined residual sweetness and a lingering, complex finish of charred wood and cocoa, epitomizing the harmony required of a well-aged strong ale.
Appearance. Jet black and opaque (40+ SRM) with a thick, creamy, deep tan head. The high viscosity and alcohol content are evidenced by prominent legs forming on the glass.
Aroma. High intensity and complex; rich aromas of bittersweet chocolate, roasted coffee, and black licorice are layered with pronounced bourbon-derived notes of vanilla, toasted coconut, and charred oak. Subtle dark fruit esters, reminiscent of prunes and raisins, appear alongside a clean, spirituous warmth.
Taste. Intense and multi-layered; initial flavors of dark cocoa and espresso give way to rich bourbon-soaked wood, caramel, and vanilla. A medium-high bitterness provides structure but is softened by a velvety malt sweetness and dark fruit notes like black currants. The finish is long and warming, featuring a harmonious blend of roast, oak tannins, and a hint of leather.
Mouthfeel. Full to very full-bodied and chewy, with a velvety, luscious, and coating texture. Carbonation is low to moderate. A smooth, gentle alcohol warmth is noticeable and well-integrated into the finish.
