Mad Scientist

This American Barleywine presents a decadent fusion of extended barrel aging and specialty adjuncts. The sticky-toffee malt base, matured for over three years in bourbon casks, creates a rich foundation of caramel and charred oak. Intense layers of Brazilian Yellow Bourbon coffee provide a nutty, roasted counterpoint, while Madagascar bourbon vanilla rounds out the profile with a creamy, spice-driven sweetness. Despite the intense additions, the assertive hop bitterness characteristic of the style provides a necessary structural backbone, resulting in a complex, contemplative sipper that balances dark fruit esters with deep, spirituous warmth and a velvety, lingering finish.

Appearance. Deep copper to mahogany with brilliant ruby highlights; pours with a thin, light-tan head that dissipates quickly, leaving moderate lacing and noticeable legs on the glass.

Aroma. High intensity; dominant notes of toasted oak, vanilla, and bourbon spirits blend with the roasted nuttiness of Brazilian Yellow Bourbon coffee. The malt presents as rich caramel, toffee, and light molasses, complemented by moderate dark fruit esters like raisin or fig and a subtle, aged resinous hop character.

Taste. Initial impression is a massive wave of toffee and caramel malt sweetness, followed by the earthy, roasted complexity of coffee and a smooth Madagascar vanilla creaminess. The bourbon barrel contributes charred oak and spirituous depth. A firm, moderately-strong hop bitterness persists through the mid-palate, preventing the beer from becoming cloying. The finish is long and warming, balancing residual malt sweetness with a clean, hop-derived bitterness.

Mouthfeel. Full-bodied and chewy with a luscious, velvety texture; carbonation is moderately low, accentuating the beer's weight. A smooth, noticeable alcohol warmth is present but well-integrated, without any harsh or solventy edges.
