Herout

This organic French Cider presents a refined yet rustic character, celebrating the terroir of Normandy with its use of heritage organic apples. On the nose, it balances vibrant fresh apple skin with subtle earthy, farmhouse nuances from its unpasteurized, artisanal fermentation. The palate is decidedly dry—true to its Brut designation—offering a crisp acidity and a delicate tannic structure that provides grip. Highly effervescent, it leaves a clean, refreshing finish characterized by lingering notes of bittersweet apple pomace and a whisper of mineral complexity, free from any cloying sweetness.

Appearance. Deep gold to amber (SRM 5-8), with a lively but short-lived white mousse-like head that leaves minimal lacing. Clarity is brilliant with a visible, energetic carbonation stream.

Aroma. High intensity of bittersweet apples and dried apple pomace. Notable earthy, rustic phenols suggesting a clean farmhouse character, with subtle spicy esters and a hint of mineral slate. No malt or hop character is present.

Taste. Initial impression is sharply dry and tart. Rich, authentic apple flavor persists with a complex balance of malic acidity and moderate tannic bitterness. Fermentation is clean but maintains a wild, orchard-floor complexity. The finish is very dry and crisp with a lingering, slightly puckering tannic aftertaste and no residual sugar.

Mouthfeel. Medium-light body with a sharp, prickly high carbonation that enhances the dryness. Alcohol warmth is negligible. A distinct tannic astringency provides structure and a clean, mouth-cleansing effect.
