This West Coast style American IPA showcases a brilliant clarity and an assertive hop profile driven by Columbus, Idaho 7, El Dorado, and Simcoe Cryo. The rare use of a traditional decoction mash imparts a distinctively firm, toasted malt bite that anchors the aggressive bitterness. High-intensity aromas of resinous pine and dank earth from the Columbus mingle with tropical stone fruit and citrus notes from the Idaho 7 and El Dorado. The Simcoe Cryo amplifies the pungent evergreen finish. It strikes a satisfying balance between a clean, dry fermentation and a robust, chewy malt structure, delivering a classic yet uniquely textured IPA experience.

Appearance. Medium gold to light amber with brilliant clarity. Features a persistent, dense, off-white head that leaves significant lacing on the glass.

Aroma. High intensity hop aroma featuring dank pine, resin, and citrus zest, complemented by notes of tropical mango and stone fruit. A low but noticeable toasty, bready malt presence from the decoction mash supports the hop bouquet. Clean fermentation profile.

Taste. Assertive hop-forward flavors of grapefruit peel, resinous pine, and tropical fruit lead into a medium-high bitterness. The decoction method provides a firm, grainy, and slightly toasted malt backbone that balances the hop load. Finishes dry and crisp with a lingering hoppy aftertaste and clean alcohol.

Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate to medium-high carbonation. Displays a very light, well-integrated alcohol warmth and no harsh astringency.
