We were born to make Pale Ale, a style that was little known in Australia when we started, but is now much loved. Back in the day there were two hop varieties coming out of the North West of the US that really took our fancy; Cascade and Chinook hops. These hops packed an addictive punch and gave rise to the super hoppy American Pale Ale, a style that inspired us back then and still inspires us today.

Since day one, we have brewed our Pale using whole hop cones, sourced straight from the US directly to our breweries (something pretty unique) and use our hop back to extract those beautiful, hoppy aromas and delicate bitterness. Preservative and additive free, our Pale Ale is live yeast conditioned, in the bottle (after filling) for unmatched freshness and character and takes about six weeks from brewing to be released."

We love our Pale Ale. Many of us from the brewery have made pilgrimages around the world in search of great varieties of this wonderful style.  Surprisingly, there are no great secrets to brewing this type of ale but there are most definitely no great shortcuts. Bag loads of whole Chinook and Cascade hop flowers that we source from Washington and Oregon in the US as well as some local flowers from Tasmania are thrown at this beer, creating an intense citrus and grapefruit aroma and flavour that we balance with a careful selection of speciality malts and a local pale malt made to our own specifications.  Preservative and additive free our Pale Ale is live-yeast conditioned in bottles and kegs for unmatched freshness and character. From brewing to release, a batch of pale ale takes about six weeks, allowing for two weeks conditioning in the bottle after packaging. No artificial additives are included, just great ingredients. Pour it into a glass to enjoy it at its best!

Our friends at Little Creatures use whole hop flowers in their Pale Ale, which gives it a pretty serious citrus and stone fruit flavour, balanced with specialty malts and a decent hit of bitterness.
