Les Danaïdes Saison Noire
This Saison Noire presents a striking interplay between rustic farmhouse character and deep, roasted complexity. Brewed with a sophisticated malt bill of Pilsen and Munich, alongside Special W, Carafa II, and Carafa III, it offers layers of dark chocolate and toasted crust. The aromatic profile is defined by spicy Saaz and floral Aramis hops, backed by the classic peppery phenols of Saison yeast. Despite its dark appearance, the beer remains impressively dry and highly attenuated, featuring the subtle grip of malted rye and wheat. A firm bitterness from Magnum hops provides a clean, assertive finish to this bold, ebony interpretation.
Appearance. Deep ebony to near-black in color (SRM 35-40); dense, long-lasting tan head with excellent Belgian lacing; opaque in the glass, though it may show ruby highlights at the edges if held to light.
Aroma. Moderate to high intensity featuring a complex mix of peppery yeast phenols and spicy, floral Aramis and Saaz hops. The malt provides a rich backdrop of coffee and dark bread crust without being acrid. Low fruity esters of dried plum and dark cherry are present.
Taste. Initially bone-dry with a powerful roasted malt character, displaying notes of bitter chocolate and toast. High bitterness is balanced by peppery yeast and spicy hop flavors. The addition of rye provides a faint, rustic graininess. The finish is extremely dry and crisp with a lingering roasted aftertaste.
Mouthfeel. Medium-light to medium body with a slightly creamy texture from wheat and rye; very high carbonation creates an effervescent, scrubbing sensation. Light, well-integrated alcohol warmth is present without any harshness or astringency.
