This Straight Sour Beer presents a striking visual of deep ruby with a vibrant, hot pink foam. The sensory profile is defined by an assertive house mixed fermentation character, matured for six months in ex-red wine foeders to impart a subtle vinous complexity. Aromatically, the beer is dominated by lush, ripe blueberries and the smoothing, aromatic sweetness of vanilla, which elegantly counterbalances the sharp lactic tartness. On the palate, the bright acidity of the base beer provides a crisp foundation for the forest-fruit intensity, while the vanilla and oak tannins from the wood aging add depth. It concludes with a refreshing, dry, and fruit-forward finish.

Appearance. Deep ruby in color (15-20 SRM) with a large, dense, hot pink head that exhibits moderate retention and lacing; clarity shows a slight haze from fruit additions.

Aroma. High intensity; sharply sour lactic character is immediate, followed by a concentrated aroma of fresh blueberries. Sweet vanilla notes provide a soft contrast, underpinned by light oak and red wine esters from foeder aging. No hop aroma.

Taste. Initial impression is a sharp, clean lactic sourness. Intense blueberry flavor dominates the mid-palate, supported by a subtle, bready pale malt character. Vanilla additions provide a softening counterbalance to the acidity. Nuances of red wine tannins and light oak appear toward the end. Finish is dry and acidic with a lingering tart berry aftertaste. Hop bitterness is undetectable.

Mouthfeel. Light body with a crisp, refreshing acidity. Carbonation is high and effervescent. Alcohol warmth is negligible; despite the fruit and wood contact, it remains smooth without astringency.
