Years of aging in the Rackhouse contribute elegant wood tannins and a smooth vanilla undertone that softens the distinct, lactic sourness. The mixed-culture fermentation yields a layered acidity, while the brown strong ale components provide a sturdy malt backbone. Appearance. Deep reddish-brown to dark mahogany (22 SRM) with good clarity. It supports a modest, light tan head with average retention that leaves fine lacing as it recedes.
Aroma. High intensity and deeply complex. Initial waves of dark caramel, treacle, and toasted malt are met by a pronounced tartness. Secondary notes of black cherries, plums, and raisins emerge, supported by spicy vanilla and a dry, woody character from extended aging. Low spicy phenols and a hint of nutty oxidation add to the vintage character without any vinegary acetic notes.
Taste. A sophisticated sweet-and-sour profile. Upfront flavors of dark cherry and red currants transition into a rich malt center featuring burnt sugar, toffee, and a touch of chocolate. The sourness is firm but integrated, providing a bright counterpoint to the malt sweetness. Wood-derived tannins and vanilla notes provide structure. The finish is dry and slightly warming with a lingering vinous aftertaste.
