Le Soupir - Brassage & Assemblage Folk

This rustic Saison offers a complex bridge between German brewing tradition and Belgian farmhouse character. Brewed with Barke Pilsner malt, it presents a foundational grainy sweetness reminiscent of freshly baked bread and honey. The use of French hops introduces delicate floral and herbal aromatics, which intertwine with the spicy phenols and citrusy esters produced by the unique co-fermentation of Lager and French Saison yeast strains. A months-long rest in barrels with Brettanomyces and bacteria adds a sophisticated wild funk and a faint, bright acidity. The result is a bone-dry, effervescent, and multi-layered ale with a crisp finish and subtle oak-derived depth.
Appearance. Pale gold (5 SRM) with a slight haze from its unfiltered nature. It supports a long-lasting, dense, rocky white head that leaves significant lacing on the glass.
Aroma. Moderate to high intensity featuring a mix of spicy black pepper and lemon zest from the yeast. The Barke Pilsner malt provides a soft, grainy, crackery base. French hops contribute earthy and floral notes, while barrel aging introduces a rustic funk of leather and hay with a very faint acidic tang.
Taste. Initial grainy malt flavors are quickly overtaken by a complex fermentation profile of spicy phenols and pome fruit. The hop flavor is low to moderate with herbal qualities, supported by a mild bitterness. Brettanomyces adds an earthy complexity, while bacteria provide a refreshing, soft tartness. It concludes with an exceptionally dry, clean finish and a lingering spicy aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. It feels crisp and lively on the palate with no alcohol warmth and a notable absence of astringency despite the barrel maturation.
