This Belgian-style Witbier presents a vibrant twist on the classic profile by infusing a significant amount of fresh clementine juice into the traditional wheat base. The sensory experience is led by a bright, sun-kissed citrus character that marries the zesty, sweet notes of clementine with the herbal, peppery snap of freshly ground coriander. A foundation of soft, bready unmalted wheat provides a creamy texture, while the yeast contributes subtle spicy phenols. Effervescent and crisp, it balances a delicate fruit sweetness against a dry, thirst-quenching finish, making for a sophisticated yet highly approachable fruit-forward wheat ale.
Appearance. Pale straw to light gold (approx. 3 SRM). Distinctly cloudy and opaque with a milky sheen. Features a dense, billowing white moussy head with excellent retention and delicate lacing.
Aroma. Moderate intensity featuring a dominant bouquet of sweet citrus and zesty clementine. This is layered over a bready, grainy malt backbone with hints of honey and vanilla. Complementary aromatics of freshly ground coriander provide a spicy, lemony-herbal counterpoint. Low spicy yeast phenols; hop aroma is absent.
Taste. Initial impression of bright, juicy clementine fruitiness and soft wheat breadiness. The middle palate reveals subtle lemony coriander and a light peppery spice character. Hop bitterness is low, serving only to balance the fruit and malt without lingering. The finish is refreshingly crisp and dry, leaving a clean aftertaste of citrus zest and light grain.
