Lassen Traditional Cidery Winesap
This wild-fermented cider offers a sophisticated sensory profile led by the vinous, wine-like character of heirloom Winesap apples. The aroma is highly expressive, blending the floral, honey-like essence of Golden Delicious with a subtle earthy funk derived from aging in neutral French oak red wine barrels. On the palate, a sharp, refreshing acidity driven by Granny Smith and Newtown Pippin provides a bright counterpoint to the deeper, more structured fruit notes of Arkansas Black. Bone-dry and elegant, it showcases a complex interplay of tart apple skin, delicate tannins, and a clean, lingering finish that highlights its rustic, barrel-aged heritage.
Appearance. Pale straw to light gold (SRM 2-3). Brilliant clarity with a light, effervescent bead that quickly dissipates. No head retention or lacing.
Aroma. High intensity of fresh and bruised apples. Distinctive honey-like sweetness from Golden Delicious mingles with a vinous, grape-like quality. Subtle wild fermentation notes of light leather and earthy hay are present, alongside a very faint toasted oak and red wine tannin character from the barrel aging.
Taste. Initial impression is sharply acidic and bone-dry. Strong flavors of tart green apples (Granny Smith) and skin tannins dominate the mid-palate. Complexity is enhanced by the vinous depth of Winesap and a rich, spicy apple character from Arkansas Black. The finish is very dry and remarkably clean with a lingering, mouth-watering acidity and a touch of oak-derived astringency.
Mouthfeel. Medium-light body with a crisp, refreshing texture. Carbonation is moderate to high, providing a lively prickle on the tongue. Noticeable but well-integrated alcohol warmth from the 8.5% ABV. Moderate astringency that dries the palate.
