This refreshing Wild Specialty Beer captures an energetic, summery brightness with its vibrant lactic tartness and low-ABV drinkability. Dry hopping with Belgian Sorachi Ace drives a unique aromatic profile, weaving together distinct notes of key lime sorbet, fresh dill, and cracked green herbs. The profile is defined by a zesty, clean lactic acidity that elevates the citrus-forward hop character. A lean malt backbone lets the expressive yeast and rustic herbal highlights shine, finishing bone-dry and spectacularly crisp. It is a highly creative, light-bodied sour ale that balances modern hop expression with a traditional wild fermentation.
Appearance. Pale straw (SRM 2-3) with a slight, inviting haze. Pours with an airy, white head that dissipates fairly quickly to a thin collar, leaving minimal lacing, typical for a lactic sour.
Aroma. High intensity of bright key lime, lemongrass, and lemon verbena, backed by the signature dill and crushed culinary herb notes of the Belgian Sorachi Ace hops. A clean, sharp lactic sourness underpins the bouquet, with virtually no malt aroma and a very low, rustic wild yeast character.
Taste. Initial impression is a mouthwatering wave of key lime sorbet and zesty lemon. Very low cracker-like malt flavor is quickly overtaken by a dominant, clean lactic acidity. Hop flavors of fresh lemongrass and dill are highly expressive. Bitterness is very low, with the clean, puckering sourness providing the structural balance. Finishes bone-dry, crisp, and exceptionally refreshing with a lingering, zesty lime-peel aftertaste.
Mouthfeel. Light-bodied and highly effervescent with prickly carbonation. No alcohol warmth is perceived at 3.5% ABV. Crisp and mouthwatering acidity dominates, without any harsh astringency.
